Edamame Hummus
serves 4
Ingredients
16 oz shelled edamame, frozen
1 T tahini paste
3 T lemon juice
2 cl garlic
1/4 t cayenne pepper
1/4 t kosher salt
3/4 C canola oil
Instructions
Boil the frozen edamame in 6 C water until tender (10 minutes). Drain and cool in iced water.
Puree the beans, tahini, lemon juice, garlic, cayenne, and salt. Continue pureeing while slowly adding the oil until fully incorporated.
Plate and serve with pita, chips, and/or crudité.
